This classic Hawaiian-style butter mochi is soft, chewy, and rich — made with mochiko (sweet rice flour), coconut, and butter. It’s a crowd-pleaser at potlucks, luaus, or any time you’re craving a tropical treat.

1 lb mochiko (glutinous rice flour – about 3½ cups)
2½ cups white sugar
1 tsp baking powder
½ cup butter, melted
3 cups whole milk
5 large eggs
1 tsp vanilla extract
1 cup sweetened, flaked coconut
